1) Oats
Humble oats are a rich source of many nutrients involved in the immune response including selenium, iron and zinc as well as being a source of beta glucans.
2) Canned pulses
Canned pulses are rich in zinc as iron, which is used by the immune system. They are also a cheap source of protein if you cannot afford to stock up on fresh meat and fish. Pulses are also hugely versatile and can be blended into nutritious dips and spreads.
3) Frozen peas
Peas are rich in iron and vitamin C, which helps to support the immune system. The fact that they are frozen makes them more cost effective but also means they will last longer. You can add frozen peas to pretty much any dish to boost its nutritional content.
4) Eggs
Eggs are rich in many nutrients including those required to support your immune system. Eggs have a surprisingly long shelf life at around 4-5 weeks and their versatility means they can be used to make many nutritious and economical dishes. Egg fried rice with chopped peppers and frozen peas is a really quick and nourishing dish.
5) Wholegrain brown rice
This healthy carbohydrate can be used as a base or accompaniment to many different dishes and also supplies a good source of zinc, which is required for a healthy immune system.
