– 500g asparagus (about 1lb), trimmed
– 2 eggs, beaten
– 50g breadcrumbs (about 1¾oz)
– 50g Parmesan (about 1¾oz)
– Zest of ½ lemon
Method
1. Preheat oven to 200°C (180°C fan/390°F/gas 6).
2. Dip asparagus in egg, then breadcrumbs mixed with Parmesan and lemon zest.
3. Bake for 15–20 minutes until golden.
